These vegetarian patties are jam packed full of not just one but 2 cheeses!
• 1 large cauliflower
• 1 large broccoli
• 200 grams breadcrumbs
• 4 tablespoons plain flour
• 1 large egg, beaten
• 250 grams camembert
• 100 grams grated cheddar
1. In a food processor blitz the cauliflower and broccoli separately. Once blitzed, squeeze out as much moisture as you can and then place in a bowl, and add to this the fine breadcrumbs, the flour and the beaten egg. Mix together until well combined and smooth. On separate trays lay out the mixtures and flatten so they are even. Using a large cutter make circles in the mix. Top this with a mixture of the cheeses and then top with a matching circle. Do this until all the mix is used up and then do the same with the broccoli mix. Shape into patties and make sure that the edges are completely sealed.
2. Preheat the oven to 200C and drizzle the top of the patties with a little oil. Place on a tray and cook in the oven for about 12 minutes, and then turn and cook for 6-8 minutes on the other side.
3. Serve with sauces of your choice, a bit of salad and bread rolls.
